Why does poultry rank so differently from beef?

Because the two meats answer to different things. Beef consumption tracks cattle country and long habit; poultry tracks cost, and chicken is the cheapest widely available meat almost everywhere, so it rises fastest as incomes rise and it faces the fewest dietary restrictions. Several countries near the top of this table sit well down the beef one, and that contrast is the most interesting thing either table has to say.
